Pate Brisee pastry dough

             There are many recipes for pie doughs, but this is the one I use most often because I find it very easy to make. This is called Pate Brisee and it’s one of the most popular.


*300 gr flour
*125 gr cubes of cold butter
*50 gr cold water
*1 tablespoon sugar
*1 teaspoon salt

             First mix the flour, sugar and salt. I use powdered sugar because all the ingredients are cold and this way we won’t be left with any undissolved sugar granules.

             Then add the butter and stir until it becomes like wet sand.


[ Tip ] Do not mix the ingredients by hand. The secret to crispy dough is keeping the butter cold. If you mix using your hands, the butter will melt and we will not get the desired result. I use the mixer, but if you have a food processor I recommend you use it with the paddle.

             Add water until the composition is homogeneous and unsticky.

             Then leave the dough in the refrigerator for at least 1 hour. I usually make it at night and use it the next day.


[ Tip ] This dough can be stored in the freezer for a month. So you can prepare it when you have a little free time, and it will be ready to use whenever you want.

             All that remains now is for you to decide what kind of pie you want to make. What I like most about this recipe is that the dough can be used for sweet pies and salty tarts also, even if it has sugar in it’s composition.
